What is the refinement process used for this sugar?

Sugar In The Raw® is made exclusively from sugarcane. Juice is extracted from the sugarcane and then crystallized through evaporation to maintain its natural molasses, golden color and distinctive flavor. The resulting crystals are rinsed with a very small amount of water to remove just enough stickiness to make the product free-flowing. Hope this helps!

can you bake with it?

When cooking, I've successfully used Sugar In The Raw in place of confectioners sugar by running it in the coffee grinder. Cheers!

Is this the same as Demerara sugar?

They are NOT the same thing. Turbinado sugar is made from the first pressing of sugar cane and retains a greater amount of molasses than demerara sugar. Turbinado sugar has a stronger molasses flavor. Demerara sugar has slightly less molasses content and therefore has more of a toffee-caramel flavor. Demerara is better.
