The products offered are: Affinato 12 year aged Aceto Balsamico Tradizionale di Modena (Traditional Balsamic Vinegar of Modena) and carries a D.O.P. ("Denominazione di Origine Protetta") stamp - a European Union certification that guarantees an ingredient's quality, production, and place of origin. The only ingredient is grape must. This Aceto Balsamico is aged for a minimum of 12 years in a "batteria," or five or more successively smaller aging barrels. These barrels are made of different types of wood such as oak, chestnut, cherry, juniper, and mulberry, so that the vinegar can take on the complex flavors of the casks. Vecchio Cantalupo- This artisanal balsamic vinegar is made in the same traditional methods as 12 & 25 Year aged Traditional Balsamic Vinegar di Modena, but are lacking one variable to be Aceto Balsamico Tradizionale - e.g. they do not use all 5 prescribed wood barrels, but a minimum of 3 barrels over an aging period of at least 3 years (it must be aged for at least 3 years to be called Vecchio "Aged" and must be in a 250ml bottle). This Balsamico uses Grape Must and a small amount of high quality Wine Vinegar from Trebbiano grapes. There is no caramel coloring or any thickening agents added. This Balsamico has a fantastic sweet & Tart flavor, with syrupy consistency similar to our Tradizionale Balsamic Vinegars. A great inexpensive alternative to a Tradizionale Acetia Rossi Barattini, one of the oldest family producer in Modena and one of the most historical families in the province of Modena. Rossi Barattini produces a variety of Artisan Balsamic Vinegars while honoring ancient traditional methods which have been handed down for over four generations at the Azienda Agricola Rossi Barattini.

I'm glad I did
After doing a lot of research to make sure I was buying real Aceto Balsamico Tradizionale, I decided to make this purchase. I'm glad I did. This is absolutely delicious and worth every penny. I've tried it by itself, so far, and also on caprese salad and parmesan cheese. There is no comparison between this and the stuff I've been buying in the grocery store. We also enjoyed the less expensive igp balsamic. It really tastes almost as good as the traditional, and is a great value for the money. Will buy again!
