Are they thick enough/sturdy enough to use on sandwiches, pancakes, etc?

I will give you a qualified affirmative response. They are nice and sharp and should work great for pancakes, but the bread and fillings shouldn't be too thick if you want to make sandwich shapes. I cut butterfly PBJs for my 4-year-old granddaughter and she loved them.

You could use them to cut fruit, but most of them are probably too big for a fruit-flower arrangement type thing.

How tall are the cutters? I mean, how thick of dough can they cut?

they are 1/2 inch...we just rolled out cookie dough and did not measurewill say easy clean up - just wiped and put in dishwasher. there are 101 of them - lots of themes/choices...good luck
