Long ago, my roommate's mother taught me her secrets for flavoring pinto beans to mash up and use in burritos, or whatever. The first is milk and the second is tamarind paste. Of course, knowing how to remove the wind from the beans and achieve optimum softness is also important. I cook by taste, so I add small amounts of this until things taste "right." If you put too much, your beans will be sweet and a bit strange. I have not yet tried, but this paste would also help to create caribbean jerk sauce. The tamarind flavor is unique and not often found in Murcan food, so try it out.

I use tamarind paste to make pad thai, and used to be able to get it at my local supermarket but no longer. So I looked at quite a few different types on Amazon, and chose this one for the price and good reviews. I think it's great. It is a bit small of a container, but it fits nicely in your fridge. I don't know if the container has changed from some of the reviews I saw, but this container is great. It has a very sturdy screw-on/off lid and a solid enough base. The texture is good, I like that it's smooth and doesn't contain bits of peel or seeds like some paste, and it's liquid enough to measure easily. Finally the taste is just as good as any other paste I've used, my pad thai tasted like it usually does.

This paste was an item I needed to make chili sauce. I cannot comment on the quality of the paste, I have not tasted it any where else. It was perfect for my recipe and provided a unique tartness I expected from the tamarind. It is thick, quite thick, as I would think a paste should be. I will always keep it on hand, now that I found it. I can think of several uses for it. Thanks for the product and for the large list of specialty ingredients available on Amazon.com. Tamarind is not to be found in my small town in any medium. Rather than travel to the nearest city and find an ethnic grocer, I chose to buy it here. If you're making Pad Thai, don't use this as it's from India and is a completely different product than Tamarind paste from Thailand. This is very dark and syrupy and "concentrated" and needs to be diluted with water. The directions aren't very specific about ratios or uses. I made the mistake of using this specifically for Pad Thai, and it was uneatable. Also, when I ordered it, it was listed specifically as "paste" on Amazon and the jar came with a sticker that said "Tamarid paste". In my desperation after my Pad Thai was a disaster, I removed the sticker and the actual jar is called "Tamarind Concentrate". You have to specifically look for Tamarind paste from Thailand when you search Amazon and you still need to look closely as I've only found one paste that's actually from Thailand on Amazon, even after doing a specific search. In the past I've used Tamicon Tamarind paste for BBQ sauces and it's awesome and these Tamicon brands inundate the search engine. It's just not what you use making for Pad Thai.

This is good stuff, and the container is much bigger on the inside. We're talking Tardis-level bigger. How do I know? Somebody neglected to put the lid back on properly, and then it got knocked over while sitting on the top shelf of the refrigerator. At first, nobody noticed. Then the dripping began, and the dark-colored paste began showing up on a few items. We were baffled. We weren't sure what it was - some dark, mysterious liquid appearing on random containers of food. But the flow only increased with time, and it wasn't long before I opened the refrigerator and was met by a dark, sticky tide of fluid flowing out and threatening to drown me. It wouldn't be the worst way to go, but if I must drown in any liquid meant for human consumption, I'd much rather it be a fine Belgian Lambic. I escaped with my life, but it was many hours - days, even - before our kitchen was drained, the refrigerator emptied, and the entire sticky mess consigned to oblivion. And there is STILL paste left in the jar.
