Goccia d'Oro Balsamic Vinegar of Modena Wooden Barrels Aging Balsamic Vinegar of Modena Balsamic vinegar is made from pressed Trebbiano and Lambrusco grapes and then reduced by heat in an open vat for 24 to 36 hours. The resultant " mosto cotto" is then aged in wooden barrels. Each year, a certain percentage of the liquid evaporates producing a far more concentrated wine must. Roughly 1/3 of the wine must is transferred each year to a smaller barrel in the battery. Mosto cotto is then mixed with wine vinegar to produce most of the commercially available balsamic vinegar IGP-certified Italian balsamic vinegar with custom gift box This premium grade balsamic vinegar consists solely of grape must or " mosto cotto " and aged red wine vinegar. Best Vinegar at this Pricepoint! - Oh my....simply fabulous!! I am a gourmet cook with a organic garden and can tell you that this vinegar is absolutely amazing. Yes, it's a bit expensive and should be reserved for those special nights where you want to simply drizzle it's lusciousness over a salad or grilled vegetables, along with a bit of EVOO. Really and truly delicious, dark, and very syrupy with a beautiful sweetness! In my opinion, the best vinegar you can buy at this price. The best advice I read about vinegar is to also be sure that grape must is the number one ingredient. If vinegar is ever the first ingredient, you're buying junk! You may buy this product without hesitation. Trust me. Review: Warm and embracing - Superb product!!! Worth the price! Thick, fruity, deep, resonating flavor that enlivens the palate! No bitter or flat after-tones. Full bodied, luscious, and warm from first taste to the last; like a warm lasting embrace from a long lost love, full of promise and encouragement! Truly a worthy indulgence!!!

Yum!
I really like this balsamic. It's fairly thick and the vinegar punch is pretty mild. When I ran out, I decided to try a different brand. I'll be going back to this next time I buy some. It's good enough that I would be happy to drizzle it on strawberries to serve to a guest.

Extraordinary!
A wonderful aged balsamic vinegar. We've been having it on our garden tomatoes and it's spectacular. It just shows how a top quality ingredient can create something special. We're on our second bottle and we still marvel at how good it is. It comes with an attractive, yet functional, bottle and small box. Would be a great gift.

Simply the best.
I have been using this quite a bit. There is absolutely no comparing this to store bought. It is thick and sweet, but also curiosly savory, as well. My favorite dish so far is to salt and pepper some organic carrots, and glaze them with the balsamic. I roasted them for an hour. They were amazing. I keep looking for, and finding, ways to cook and eat this. It is a bit pricy, but I will never be able to go back to the store version. I am eating healthier, but my food has so much flavor. I am going locally sourced fruits and veggies and just lightly flavoring. This balsamic deserves the best produce and so do you.

The real deal
Finally authentic Balsamic! I've been looking for real balsamic for a while. Here in the markets we find the fake stuff which is loaded with sugar and tastes completely different. This vinegar is a little thicker and has a rich sweet flavor. It goes perfect with a great olive for for salads or dipping bread. It's a small bottle, but a little goes a long way. This would make a great gift for any foodie who appreciates real balsamic from Modena.

It's good
Mia bella has spoiled me completely, but they're out of stock. I've been trying replacement brands, but so far I haven't been successful. This one is better than the other replacements...so far.

Next best thing to the expensive stuff!
Next best thing to the real thing. This is of Modena, but not the full kind, as it's mixed with I believe red wine vinegar. But that's not a mark against it, as this is probably the best you'll get at this price. The flavor is full and the viscosity is as expected. Went great on some fresh cut tomatoes and some basil.

Not a particularly strong flavour but has a good consistency and taste
Having discovered balsamic vinegar about 5 years ago, I now can't get enough of it! However, one thing I have noticed is that there are a huge number of different consistencies (from normal vinegar to glaze) and flavours. This particular variety has a reasonably thick consistency (you can tip it upside down but the whole bottle doesn't immediately flow out) however, the flavour isn't as strong as many other balsamic vinegar's which I have tasted. Depending on how strong you like your balsamic vinegar, this could beneficial and if you want a stronger flavour, you can just add more. However, the disadvantage is that at ยฃ25, it is rather expensive for a rather small 250ml bottle and so, if you want a strong balsamic flavour, you might be better selecting a stronger variety.
