With that being said, I do think it was important to know that fact! The amount of baking I can do varies, from week to week and month to month! After all, this is a pound of yeast, and before I purchased it, I honestly asked myself, "Are you sure you want to buy this much yeast, because that can make A LOT of dough?" Considering the price, ABSOLUTELY !!! Now, if you store it correctly, it can last a VERY VERY LONG TIME, and trust me, you'll know if and when it goes bad! Before opening it, find a container that's big enough and that will also be air-tight. You'll notice that it has come to you in a vacuum-packed package! There is also an expiration date on it, and there are instructions too! Keeping that date in mind, put that date on your container, go ahead and dump your yeast into your container, and then tape your instructions that you've cut off the bag onto your container as well, and then place the whole thing into your refrigerator! I almost forgot ... this yeast is like SUPER-CHARGED or like it's INDUSTRIAL STRENGTH yeast !!! You'll see what I mean the first time you use it, so just be prepared ... LOL ๐๐คฃ When you're ready to use your yeast, take out only what you need and then put the rest right back into the fridge, and allow what you're using to come to room temp., and you're good to go! The way to know if your yeast has gone bad, you'll know it, because if it doesn't react to being put into warm water and sugar or whatever method you use! I hope this helps you to consider possibly buying this product because it will ultimately help you save a lot of money in the end! Works well, makes bread easy.
I use a super simple recipie. I just sorta squeeze it around and put it in the bowl until it puffs up like the first picture, mash it around tear it in half and roll it out one in each greased pan. Let it rise again, then stick it in the oven. I'm not using a bread machine. I can't eat it fast enough so now I cut each loaf in half and freeze 3/4 of the bread. I take it out and slice off the pieces I want for lunch lately pb&j, though it makes tasty sandwiches too. I know it's as much about the flour as the yeast but really it wouldn't work without the yeast...trust me. I've spent weeks trying to get a decent sourdough loaf and by comparison this stuff practically makes itself. Not to mention the maintenance of trying to keep my sourdough starter alive. The dry yeast is so much easier. I mainly struggle with the sourdough because I refuse to be beaten by yeast, but thank goodness I have the dry yeast in a jar for when I just want some bread.

Good yeast, at a time when small packets at grocery very hard to find
We bought this as a way to get yeast we have not been able to find at our local grocery store since the COVID-19 pandemic started. I have to say the yeast works ok. The flavor is fine, and packaging is fine and is a decent value. But when they say instant, they mean instant. The productive lifespan, once activated, is very short. So I learned that recipes for bread where you would leave an hour or more for the first rise, and 45-60 min for the second rise is too much. The yeast goes crazy after activating, but if you work too long, and leave rising too long, by the time you get to the second rising or into the oven for the oven spring, it is exhausted and done for. Meaning your rolls or bread is done for - a hockey puck when it comes out of the oven. When I cut the recipe time for working and rising by half, the end product was much more like what it should be. So yes this is yeast, and it is very INSTANT yeast, but will likely try to find something that I can work with better.

Great thing in a small package
This is really excellent yeast! I was afraid it wouldn't do well in my bread recipes, especially after reading Q&As suggesting it's better for sweet breads. Most of my baking is loaves of bread that are started in the bread machine and finished in the oven. Last night I did a loaf of potato bread and a batch of Clone of a Cinnabon cinnamon rolls. They both rose beautifully...I'd even say too much. I will be revising my yeast quantities downward in the future. And both had good flavor. My only complaint is with the packaging, and not in the same way as others. Yes, it comes in a vacuum packed bag that seems hard as a brick until you open it. The problem is by the time you cut the top off the bag, there's not enough material left to fold down and clip shut. Maybe they could slightly lengthen the bag? In any case, great product that I highly recommend.

Great yeast performance
This yeast is a new product for me (been using either Red Star, or Fleishmann's Active Dry Yeast) so wasn't sure where it sat on the bread producing spectrum of Saccharomyces Cerevisiae. At any rate, I've made several loaves of bread with it in two different bread machines (my old Wel-Bilt died making a loaf of whole wheat dough after 25 years of faithful service), and got spectacular results. Bread was nice and fluffy, with a light golden, and flaky crust, smooth texture with even crumb. The flavor was what really surprised me, making the bread more intense in flavor, which wasn't expected. Rises well, and cuts equally well, as it should, even with as little as 1ยฝ tsp of yeast in a 2 pound loaf! For what I paid for the pound ($7 at the time of purchase) of yeast, it have performed admirably, yielding very handsome loaves of bread without nary a problem to be found. Packaged in a foil pack that is vacuum sealed, I put it into a repurposed corn starch jar in the fridge once it was opened. Shelf life is stated at 3 years, but I doubt it will last that long in our household! When the wife and I finally leave for full time RV living, all our bread will be home made, and this yeast will be my first choice based on my experiences in using it so far. I'll update this review to let everyone know how it performs over time, and with different recipes, and with different baking techniques. I highly recommend this yeast to any home baker who wants to make the very best bread, and with consistency!

Very nice, tiny grained, dry yeast
I was delighted when today, I opened the package, and found a very dry, tiny grained yeast inside, and lots of it. My breadmaker, dark rye bread rose high and evenly. It rose higher and was a more evenly shaped loaf than what I have ever made before. I had been using yeast bought from a refrigerated case at a co-op, bulk. That yeast was stored refrigerated at my house, and I used it all in 11 months. My rye bread has never risen like this before. In fact, the loaf is so large the slices are almost too big for my toaster. I have attached two images. One shows the good pore distribution.

Fresh, Fast and Viable. It's all good!
I am very happy with my purchase. While some have reported receiving yeast that was nearly past it's expiration date, mine was not. This product has a 2 year posted shelf life and my package, received in early May, was "manufactured" 2 and a half months prior to shipping. And speaking of shipping, the seller was very prompt in sending the product to USPS. I received the package several days befor it was expected. As some reviews have mentioned the yeast is shipped as a "brick". While this is true it is only because it was probably vacuum packed at the point of manufacture. Once the package is opened, the yeast flows freely. I also tested the yeast to make sure it was alive by adding some to a sugar water mixture. It started reacting within just a few minutes and built up a nice little froth in about half an hour.
